Grown by Rene Aguilar at Finca La Montañita in Chalatenango — the coolest, highest part of El Salvador. 12 manzanas, Pacamara growing alongside citrus trees, harvested under real-world conditions: labour shortages, variable weather, all of it.

Honey processed: cherries depulped, dried with their mucilage intact for 20–25 days on patios and raised beds. That's where the sweetness and texture come from. Small batch. Here for a limited time.
